
Browntop Millet Vegetable Bhel
Ingredients
Pre-soaked browntop millet, cooked and cooled – 1½ cups
Onion, tomato, cucumber – finely chopped, ½ cup each
Green chilli, roasted peanuts – 2 tbsp
Chaat masala, roasted cumin powder – 1 tsp each
Lemon juice, coriander leaves – as required
Salt – to taste

Method
1. Cook the millet until just tender, then cool completely so the grains stay separate.
2. Toss the cooled millet with chopped onion, tomato, cucumber, green chilli and roasted peanuts.
3. Sprinkle chaat masala, roasted cumin powder and salt over the mixture.
4. Add a squeeze of lemon juice and toss well.
5. Garnish generously with coriander leaves.
6. Serve immediately as a light evening snack.
