
Barnyard Millet Mango Milkshake
Ingredients
Pre-soaked barnyard millet – 100 g worth, ground with water in equal parts to extract milk
Regular milk – 100 ml
Ripe mango, peeled and sliced – 50 g
Sugar – 25 g
Almonds and a pinch of saffron, for garnish

Method
1. Grind the barnyard millet with an equal quantity of water, then strain through a fine cloth or sieve to extract a milk-like liquid.
2. Combine the barnyard millet milk with the regular milk and bring to a boil for 5–10 minutes, then cool to room temperature.
3. Blend the mango slices with sugar into a smooth pulp.
4. Add the cooled milk mixture to the mango pulp and blend again until smooth.
5. Strain if a smoother texture is preferred.
6. Pour into glasses and garnish with almonds and a pinch of saffron; serve chilled.
