
Barnyard Millet Pizza Base
Ingredients
Pre-soaked barnyard millet – ½ cup, ground to a smooth batter
Refined flour (maida) – ½ cup
Baking soda – ½ tsp
Salt, oil – as required
Toppings: onion, capsicum, tomato, sweet corn, tomato sauce, mozzarella cheese

Method
1. Grind the pre-soaked millet to a smooth batter and mix with maida, baking soda and salt.
2. Pour a ladle of batter onto a hot flat pan without spreading; drizzle oil at the edges, cook and flip to make a base.
3. Preheat the oven to 180°C.
4. Spread tomato sauce and cheese over each base, then top with chopped vegetables.
5. Bake for 7–10 minutes until the cheese melts and bubbles.
6. Serve hot with a sprinkle of chilli flakes and mixed herbs.
