
Kodo Millet Vegetable Upma
Ingredients
Pre-soaked kodo millet – 1 cup
Onion, carrot, beans, potato – chopped, 1 cup total
Mustard seeds – 1 tsp
Urad dal and chana dal – 1 tsp each
Curry leaves, green chillies, ginger – as needed
Oil – 2 tbsp
Salt and water – as required

Method
1. Rinse the pre-soaked millet and set aside.
2. Heat oil, splutter mustard seeds, then add urad dal and chana dal and fry till golden.
3. Add onions, ginger, green chillies and curry leaves; sauté till the onions turn translucent.
4. Add the chopped vegetables and sauté for 2–3 minutes.
5. Add the millet along with 2 cups of water and salt; cook covered on low flame for 8–10 minutes until soft.
6. Serve hot with coconut chutney or sambar.
Tip: A pressure cooker cuts this to a single whistle since the grain is already activated.
